Located flush with the pork loin (back), the babybacks are as meaty and tender as one could wish. Smoked with love over a sumaterre wood fire for several hours.
Cooking:
Drop the bag into a pot of boiling water for about 20 minutes. Remove the rib from the bag, place it on an ovenproof tray, add the sauce to the bottom of the bag and broil for 3-4 minutes to caramelise the sauce.

About 400g for the half rack, about 800g for the full rack.
